Lemon Curd – The perfect balance between sweetness and acidity
This wonderfully fresh, English lemon curd adds a special touch to desserts and cakes. Whether as a fruity topping for yogurt, a filling for tarts, or as a highlight on scones, lemon curd is versatile. Its full flavor is especially evident when combined with cheesecake. With this simple recipe, you can conjure up a velvety, golden cream that perfectly balances sweet and sour.

Ingredients
3 lemons (organic)
135 g sugar
50 g butter
2 tbsp cornstarch
2 eggs + 2 egg yolks
Here’s how to prepare it:
Grate the lemon zest and squeeze the juice from two lemons. Heat the zest and juice with the sugar and butter in a saucepan over medium heat. Stir until the butter and sugar have melted, then bring to a boil and remove from the heat.
Squeeze the third lemon, blend the juice with the cornstarch until smooth, and stir into the sugar and butter mixture. Whisk the eggs and egg yolks and stir in. Then heat over low heat, stirring gently constantly, until the cream thickens; do not allow it to boil.
Pour the cream into a clean jar (preferably preheated in the oven at 100°C) and allow to cool.
