The annual Persian cress is cultivated primarily for its delicate seed pods and, as a cut flower, makes an excellent structural filler for bouquets. As a young plant, its small white blossoms and fresh green foliage are enchanting. The Persian cress is relatively undemanding and also makes an excellent dried flower. Its leaves are edible and, with their mild, peppery flavor, add a touch of zest to salads. For consumption, the cress should be harvested before flowering.
